Healthier Pumpkin Pie

With the blog, from time to time, we will be adding healthier recipes for some favorite foods. We will also be adding other recipes for you to try.

Makes six servings

2 cups cooked pumpkin

2 eggs, beaten

1 tsp cinnamon

1/2 tsp ginger

1/4 tsp cloves

14 tsp nutmeg

1/8 tsp all spice

6 ounces tofu

1/4 cup honey (if the pumpkin mixture is not sweet enough, you may want to increase the honey to 1/2 cup) depending on your taste

9 inch unbaked pie crust

In a large mixing bowl, combine the pumpkin, eggs, and spices. Place the tofu and honey in a blender and process on low speed until smooth. Stir this into the pumpkin mixture until thoroughly combined.

Pour the pumpkin mixture into the pie crust and place in a preheated oven - 425 degrees (F) to bake for 15 minutes. Turn heat down to 350 degrees (F) and continue baking for 45 minutes longer, until a knife inserted into the filling comes out clean.
